Oatmeal Cake
A dressed up version of cooked oatmeal, a favourite with kids!
6 cups Only Oats™ Rolled Oats (1.5 L)
1 1/2 cups brown sugar (375 mL)
1 Tbsp GF baking powder (15 mL)
1 tsp salt (5 mL)
1/2 tsp cinnamon (2 mL)
4 eggs, beaten
1/2 cup canola oil (125 mL)
2 cups milk (500 mL)
1. Preheat the oven to 350°F (180°C).
2. In a mixing bowl, combine Only Oats™ Rolled Oats, brown sugar, GF baking powder, salt and cinnamon together. Add eggs, canola oil and milk and mix thoroughly.
3. Scoop batter into a 9 x 13 inch (33 x 23 cm) baking pan. Bake for 35 minutes or until golden brown.
4. Serve hot with milk or add your favourite fruit toppings.
Yield: 9 servings.
