Old-Fashioned Sugar Cookies
Children and adults love these cookies, with just a hint of coconut.

1/2 cup soft butter (125 mL)
3/4 cup granulated sugar (175 mL)
1 egg
1 1/2 tsp vanilla (7 mL)
1 1/4 cup Only Oats™ Oat Flour (300 mL)
1/4 cup cornstarch (60 mL)
1/4 cup potato flour (60 mL)
1/4 cup coconut flour (60 mL)
1/2 tsp baking soda (2 mL)
1/2 tsp GF baking powder (2 mL)
1/2 tsp salt (2 mL)
1. Preheat oven to 375°F (190°C).
2. In a mixing bowl, cream butter, sugar, eggs and vanilla until fluffy.
3. Sift oat flour, baking soda, baking powder and salt together. Add to creamed mixture blending well.
4. Wrap dough in wax paper and chill for several hours or overnight. Roll dough on floured board to 1/4 inch (6 mm) thickness. Cut with cookie cutter into desired shape.
5. Bake until edges are lightly browned, 8 to 10 minutes. Decorate with coloured gluten-free icing.
