1. Preheat the oven to 350 °F (180 °C) Using the Only Oats™ Decadent Chocolate Muffin Mix, mix as per package instructions for making a batch of muffins. Rather than making the muffins, pour batter into a 9 x9 inch (22 x 22 cm) cake pan. Bake for 30 to 35 minutes or until centre springs back.
2. For a 2 Layered Cake: Prepare 2 cakes as above. Bake and cool. Gently remove cake from pan. Place on a cake plate. Spread your choice of filling between layers. Filling ideas: fruit, icing, jam or jelly, peanut buttter... Ice cake with gluten-free icing or whipped cream or sprinkle with gluten-free icing sugar.
3. For Black Forest Cake: Prepare 2 cakes as above. Bake and cool. Gently remove cake from pan. Place on a cake plate. Spread gluten-free cherry pie filling and whipped cream between layers and cover with whipped cream. Finish with cherry and chocolate garnishes.
Decorate to be used as a birthday cake or black forest cake. This is sure to result in rave reviews at the next party or pot luck!
